Regular table sugar is typically in the middle of the spectrum. The middle range typically includes ratings ranging from 56 to 69. Anything with a GI rating greater than 70 is considered to have a high GI.


The United States lacks a standardized GI rating system. This means that any food, including coconut sugar, may have a different GI score depending on the scale and how it’s cooked or mixed with other foods.


Sugar is absorbed differently by different people. This means that the GI effect of a food will vary depending on who is eating it. As a result, GI ratings aren’t the most effective way to determine whether a particular food is a good choice for you.


Coconut sugar contains the same amount of fructose as table sugar. That means eating coconut sugar has the same health consequences as eating too many added sugars, such as an increased risk of developing obesity and chronic diseases.


If you want to use coconut sugar in your diet, treat it like any other sweetener. Coconut sugar has the same nutritional value as refined white sugar. A teaspoon contains about 15 calories and 4 grams of carbohydrates.


Although coconut sugar is more natural, it still has an effect on your calorie and carbohydrate levels.


How to Use Coconut Sugar


As a general rule, you can use coconut sugar instead of white sugar, but keep all added sugars to a minimum. Raw coconut sugar tastes a lot like brown sugar. The flavor of your food may change if you use coconut sugar instead of white sugar.


Coconut sugar imparts a brown hue to whatever food or beverage it is used in. Keep this in mind when preparing foods or drinks where the brown tint may not be appealing.
